Chef Marina Balakrishnan is a name beloved and associated with Kerala’s regional vegetarian cuisine, she is a culinary maestro who has put her hometown Thalassery on a map through food.

Born in the quaint town of Thalassery in North Malabar, Chef Marina’s childhood was steeped in her grandmother’s kitchen. The vibrant tapestry of Malabar’s peppercorns, spices, and cultural influences have left an indelible mark on her, the same that is reflected in her cooking today. Everything, from pickles to sambar puddings, was meticulously crafted from scratch. This upbringing not only sparked her passion for cooking but also exposed her to the wisdom of sustainable practices—a philosophy deeply rooted in her culinary journey.

Embarking on an adventure at the age of 50, Chef Marina attended the Natural Gourmet Institute in New York City, where she honed her skills as a certified plant-based chef. This marked the beginning of a transformative journey that blended tradition and authenticity with contemporary skills. She further expanded her horizons by working with acclaimed chefs like Garima Arora in Bangkok. It was here that she found a mentor in Chef Garima, who recognized the potential of Chef Marina’s hands in creating authentic Keralite cuisine. Encouraged by Chef Garima to embrace her Keralite roots, Chef Marina further went on to showcase the vegetarian treasures of Kerala, defying the conventional perception of the region’s cuisine as predominantly non-vegetarian.

To showcase the treasures of her beloved roots, Chef founded – Oottupura, a unique culinary
journey that goes beyond the realms of traditional cooking. The birth of Oottupura, meaning
“divine dining space in a temple,” reminiscences a culmination of Chef’s childhood and her philosophy. Oottupura transcends the boundaries, offering a homely and nourishing experience that echoes the comfort of traditional family meals. The menu is intuitive, a celebration of Kerala’s vegetarian fare, with a focus on seasonal, fresh produce, and meticulous attention to Ayurvedic principles.

Her culinary repertoire extends beyond the extravagant Sadhya feasts to everyday meals,
showcasing the simplicity and flavours of everyday Kerala cuisine. Emphasizing the importance of narratives in food, Chef Marina brings forth not just recipes but the energy and stories that resonate with each dish.

While her journey has taken her to global kitchens, Chef Marina remains deeply connected to her roots, drawing inspiration from the humblest of places and local traditions. Her commitment to preserving the essence of Kerala’s vegetarian culinary heritage reflects not only in her delectable dishes but also in the positive energy she infuses into each creation.

Chef Marina’s culinary odyssey is a testament to the belief that food is not merely a set of recipes but a profound expression of one’s energy, intent, and cultural identity.
